As a passionate and experienced Tortillera, you will be a crucial member of our team, dedicated to our mission of serving fresh, house-made tortillas. Your primary responsibility will revolve around creating the perfect masa and ensuring a steady supply of mouthwatering tortillas throughout the day. Consistency is of utmost importance to us as we strive to deliver an exceptional dining experience to our customers. We require prior experience in tortilla making to maintain the highest standards of quality and authenticity in our flavors. You're motivated, experienced, and you LOVE tacos. You like working in a fast-paced environment and know how to have fun while staying productive. You're friendly and engaging, representing the business with authenticity and humble pride. The ideal candidate will be responsible for managing the front-of-house operations and leading the team to ensure excellent customer service and efficient daily operations. This position will require someone who is able to support the back-of-house with food prep when needed but is primarily focused on managing the front-of-house team and operations.

First, you'll be working in the best small town there is with amazing customers (some loyal supporters and others coming for the first time so they may need help with the menu or be interested in our story). They offer transparency into the business including insight into what it took to start the business, costs, margins, financial data, HR protocol and legalities, old-school marketing, digital marketing, and sales. Frank is always on-site, but hopes adding the right person to the team will allow him more flexibility when he needs to do things outside of the taco shop. He makes everything in-house except for the tortilla chips; no ingredients are pre-made, pre-packaged, or canned. Want to learn how to make incredible tacos? Frank can teach you. He’s inspired by carrying the torch his parents’ lit when running their Mexican restaurant in Pomona, California for decades during his childhood. With extensive experience in sales, printing, and packaging, he understands this industry at a very deep level.

 

Kaitlin works from their home in Rockford as the Senior Manager of Marketing Operations for a digital marketing agency based in California. She is onsite at the taco shop when she's able, including every Saturday. Focusing on front-of-house operations and service, she brings more than 20 years of experience managing small businesses in Chicago, NYC, and on the Central Coast of California. She works around the clock to keep things on track and devotes all her “spare” time to the taco shop and their dogs, Frida & Carnitas.

Responsibilities:

  • Lead and manage the front-of-house team, including scheduling, training, coaching, and motivating team members to provide excellent customer service

  • Ensure the team is on task and operating efficiently during all shifts

  • Oversee and monitor inventory, working with Frank to proactively inform him on existing stock and anticipated needs

  • Ensure compliance with health and safety regulations and maintain a clean and organized working environment

  • Support team with addressing customer challenges and resolving issues quickly and professionally

  • Support back-of-house with food prep during peak hours and proactively when needed

  • Work closely with the back-of-house team to ensure smooth operations and high-quality food and accuracy of orders

  • Manage cash and credit card transactions, including end-of-day reconciliation and reporting

  • Monitor sales and expenses (with the assistance of Frank and Kaitlin) to help make data-driven decisions for the business

  • Maintain a positive and collaborative work environment for the team

 

Qualifications:

  • High school diploma and 2+ years of hands-on work experience in a similar fast-paced, customer-facing role

  • Experience in a supervisory or leadership role preferred

  • Excellent communication and interpersonal skills required

  • Ability to multitask and work efficiently in a fast-paced environment

  • Strong problem-solving and decision-making skills

  • Ability to work flexible hours, including evenings and weekends

  • Basic computer skills, including experience with point-of-sale systems and inventory management software
